This proposal considers six stages, each one of them reflecting Thanksgiving fusion cuisine with a southwestern accent.
Entree
-Verrine: pumpkin cream, roasted peppers and spicy nuts.
-Tartlet: goat cheese with red wine and caramelized onions.
-Soup: pumpkin and butternut squash with a tomato and burratta twist.
Main Dish & Vegetables to Garnish
-Autumn turkey ballatine with gravy and chunky cranberry applesauce.
-Rosemary and roasted garlic potato parmentier.
-Green bean casserole.
-Roasted brussel sprouts, carrots, parsnips & kale.

-Brown sugar Pavlova with pears poached in spicy Muscadel.
